San Diego Chef and Founder of non-profit organization Open Gym, Phillip Esteban, will be joining acclaimed DC Chefs Paolo Dungca (Hiraya Restaurant) and James Beard Award winner Tom Cunanan (Hermies), both of Pogiboy, for a one night, bi-coastal dinner as they explore modern Filipino Cuisine in a shared space.

Passion for their Filipino heritage
The Guest Chefs Dinner will be a fine dining Filipino experience with multiple seatings throughout the night, bringing the three chefs together to share their passion for their Filipino heritage through a curated food experience.
The six-course dinner will serve as a preview of Chef Phillip’s upcoming concept Well Fed, an elevated Filipino restaurant that will open in 2022 in National City, along with previewing the DC chefs’ upcoming fine dining Filipino restaurants, Hiraya and Hermies, which are scheduled to open next year in Washington, DC.

Traditional and unique
The menu will feature a mix of traditional and unique Filipino dishes from all three chefs including Shrimp Toast with shiro dashi, ginger and caviar; Cassava Cake, a traditional Filipino moist cake with crab fat, mangalitsa lardo, ikura; Tuna Kinilaw with Koji coconut emulsion, ogo, burnt wood oil; Ginataan with delicata squash, caramelized coconut, pepitas; and Kaldereta, a goat meat stew from the Philippines with smoked duck breast, castelvetrano olives and kaldereta sauce, and a banana skin custard for dessert to end the night.

Pogiboy + White Rice pop-up
The trio will also be hosting a Pogiboy x White Rice pop-up at Chef Phillip’s White Rice in Liberty Public Market on Wednesday, November 17th from 11AM until they sell out. The Filipino rice bowl food stall will be running their regular menu all day, with the special event menu featuring savory rice bowls or āsilogā and Filipino burgers. Stop by for the Bistek Burger with umami mayo or the Chicken Joy Sando with fried katsu, gravy, queso de bola, both on a ube bun.
